Vacuum drying involves placing the material in a sealed cylinder, continuously heating it while drawing a vacuum. This causes moisture within the material to move to the surface through pressure or concentration differences, and the water molecules, after gaining sufficient kinetic energy, diffuse into the low-pressure space of the vacuum chamber and are then removed by the vacuum pump.

- In vacuum drying, the cylinder's pressure is always lower than atmospheric pressure, resulting in fewer gas molecules, lower density, and reduced oxygen content. This makes it ideal for drying oxidation-sensitive materials and reduces the risk of bacterial contamination.
